Here is my collection of healthy breakfast recipes and breakfast ideas. I have accumulated so many of them over years that I think it’s time to start documenting them in an organized way.
Many of the recipes will be fairly straightforward and will not warrant detailed instructions. If you do happen to have questions, ask away.
The list will be short initially, but will grow with time and will be updated regularly. Check back every now and again for more exciting breakfast recipes.
Poached egg on Russian rye bread with ham and pickled cherry peppers
If I were to have only one kind of breakfast for the rest of my life this one most likely would be it. A perfectly poached egg on a slice of Russian dark rye bread, sprinkled with a pinch of salt and freshly ground pepper is a feast in itself. Add a couple of slices of good lean ham, sprinkle with some finely chopped scallions and your breakfast just got even better.
Pickled cherry peppers is the only thing that may be missing. It’s pleasantly tart and sweet taste just brings everything together so well. Be careful though, pickled cherry peppers are not created equal. Some are very hot, some are too sweet. Pick the ones that you like.
Strawberry Banana Yogurt Smoothie
If you are into liquid breakfast meals or just want something really quick, a healthy, balanced smoothie will do the trick. This Strawberry Banana Yogurt Smoothie will give you just that. It’s high in protein and vitamins, low in fat, and most carbs come from fresh fruit. The best part about this smoothie is that it’s absolutely delightful and tastes like a dessert. My kids say it tastes like melted fruit gelato. And it only takes a few minutes to prepare. No wonder it’s one of the most popular recipes on my blog.
